Technique to cut wedges and a dip recipe

We thought we should share our Potato wedges cutting technique and homemade dip recipe from Fries Truck 


Clean your potatoes. Peel if desired. Slice in half, length waysPlace flat sides down on your cutting board. Cut again in half, length ways. This would be for very large wedges. For slightly smaller, cut in thirds, length ways, on a 60 degree angle, from the outside of the potato to the center line where it hits the cutting board. For even smaller, slice in half again after the second half cut.

Put it on to a roasting tray and add a good lug of olive oil and a pinch of salt and pepper. 
Toss together so all the wedges are coated in the oil then spread it out in one layer. 
Cook in the hot oven for 30 minutes until golden, crisp and cooked through. Enjoy delicious wedges.




Chipotle-Citrus Mayonnaise


     
             

             INGREDIENTS

1.       1/2 cup mayonnaise
2.       3 chipotles in adobo, finely
          chopped
3.       1 tablespoon fresh orange juice
4.       1 teaspoon fresh lime juice
5.       3/4 teaspoon minced fresh 
          oregano
6.       1 tablespoon minced red onion
7.       1 tablespoon minced cilantro
8.       Salt










In a small bowl, combine all of the ingredients and mix well. Season the sauce with salt. Your dip is ready to use . Eat it with any type of fries and enjoy.
